Gallery of wonders brings wild fermentation to life in the heart of Melbourne

Leading New Zealand wine brand, Stoneleigh™, is bringing the story of its 100% wild fermented range, Wild Valley™, to life through an immersive wine tasting experience and pop-up wine bar in central Melbourne this October.

The Stoneleigh Project sees an empty warehouse in Flinders Street, Melbourne, transformed into a series of interactive spaces that depict the winemaking process through conceptual installations and matching complimentary wine tastings. Guests at the exhibition will learn about the stories and winemaking philosophy of Stoneleigh Wines, and can enjoy a glass of wine at the pop-up bar and cellar door, open to 10pm every night. Some will be lucky enough to dine in the invitation-only secret dining room where guests will be treated to a three-course dinner with paired wines.

In addition to interactive light-scapes and virtual riverbeds, The Stoneleigh Project includes mesmerising video of Stoneleigh Wild Valley Pinot Noir under a microscope, created by internationally-acclaimed artist Susi Sie, who specialises in macro videography art. The naturally occurring yeast from the Stoneleigh vineyard and its surrounds, integral to the creation of Stoneleigh Wild Valley wine, is represented through mist bubbles that burst when touched.

The ancient river stones that pave the vineyards, the brilliant Marlborough sunshine and naturally occurring yeast in the vineyard all play a part in giving Stoneleigh Wild Valley its rich texture and lush fruit flavours.” said Jamie Marfell, Stoneleigh Winemaker.

Wild fermentation is an ancient winemaking technique where the harvested grapes are left to spontaneously ferment using the yeast that occurs naturally in the vineyard and its surrounding environment. As a result, the wine will demonstrate greater vintage variations, and increased texture and complexity on the palate compared with wines made with commercial yeast strains.

“Wild fermentation is an interesting, less predictable approach to winemaking, and we are finding that what it gives us is these beautiful wines that have all the fruit flavours you expect from Marlborough but also a really rich volume and complexity, making it perfect to pair with food,” Jamie said.

The Stoneleigh Project is open from 13 October to 5 November, at 524 Flinders Street, Melbourne. On their journey through the exhibition, visitors will sample the Stoneleigh Wild Valley range, which includes Sauvignon Blanc and Pinot Noir, and can purchase a range of Stoneleigh wines from the Stoneleigh Pop-up Wine Bar and Cellar Door.
